Peanut Butter and Pumpkin Treats

INGREDIENTS

  • 2 cups of whole wheat flour OR garbanzo bean flour
  • 2 large eggs
  • 3-4 Tbsp. creamy peanut butter (xylitol-free)
  • 1 cup of canned pumpkin puree (not pumpkin pie mix!)

DIRECTIONS

  • Pre-heat oven to 350°F. Line a baking sheet with parchment paper.
  • Stir eggs and canned pumpkin together. Add flour and mix until well incorporated. Fold in peanut butter and stir until all ingredients are well combined.
  • If dough appears crumbly, add 1 Tbsp of water and mix. Continue to add 1 Tbsp. of water at a time, mixing until dough reaches a firm consistency. If too watery, add 1 Tbsp. of flour as needed until dough is firm not sticky.
  • Place dough with 1/2″ between each biscuit. Bake for 30-35 minutes or until slightly browned. Cool before serving.
