Mini Salmon or Chicken Omelets

INGREDIENTS

  • 2 eggs (cooked all the way)
  • 1/2 cup cooked salmon thinly sliced or cooked pulled grilled chicken (non-seasoned, skin off)
  • 1/2 green pepper, diced

DIRECTIONS

  • Lightly grease frying pan with a small drizzle of extra virgin olive oil. Heat pan to medium/high.
  • Crack eggs into a bowl and stir with fork until well mixed.
  • Once the frying pan is heated, gently pour the mixed eggs into the center of the frying pan.
  • Tilt the pan to spread the egg mixture evenly.
  • Once the egg is halfway firm, add the green pepper and cooked salmon/grilled chicken.
  • With a spatula, fold egg in half and allow to heat until egg appears to be firm.
  • Remove omelet from pan and let cool before serving.
